Miso Pasta

This easy one pot dinner only takes 5 ingredients. Almost easier than making instant noodle.

INGREDIENTS

  • Salt
  • 16 ounces spaghetti or linguine
  • 6 tsps unsalted butter
  • 3 tsps white (or red) miso
  • 1 cup grated Parmesan
  • Kizami nori for garnish

PREPARATION

1. Bring a large pot a boil, stir in salt. Add the pasta and cook, until al dente. Drain the pasta but save 1 1/2 cups of pasta water.

2. In the pot, add the butter, miso and 1 1/4 cups pasta water to the pot and whisk over medium heat until miso breaks down and smooth, about1 to 2 minutes. Add the pasta and Parmesan and cook, stirring until cheese is melted and liquid vaporize.

3.Sprinkle nori before serve.


NOTES

Other than nori, I also like to sprinkle on some chili pepper.
