Tilapia with tomatoes sauce

Tilapia’s taste is very mild. I felt it is best to cook with sauce. This is very similar to Hungarian Fisherman’s soup. With similar ingredients, this is a less soup-y version. This makes a great summer dish.

INGREDIENTS

  • 2 tilapia fillets
  • 1 Tbsp olive oil
  • 2 cloves garlic, thinly sliced
  • 1 can diced tomatoes
  • 1 cup dry white wine
  • corns


PREPARATION

1. In a large skillet, heat oil over medium heat, and cook garlic until it turn brown.

2. Add diced tomatoes with juice, half a cup of wine, and corn if using.

3. Bring the sauce to a simmer, place tilapia on top and spoon sauce over the fish. Cover and cook for about 20 minutes.

4. Add more wine if the sauce begins to dry out.



NOTES

I lightly sprinkle salt and pepper on tilapia and let sit for 15 minutes before cooking. You can choose to add olives in the sauce to add the saltiness. If so, don’t pre-season tilapia. Adding corn is to balance the sour and saltiness. Add chili pepper if you like spicy. I added paprika.
