Grilled Saba (mackerel)

This simple grilled fish is easy to make and with minimum ingredients. Baked in oven, no fire required. Set and forget, until timer sets off, it’s dinner time.

INGREDIENTS

  • Mackerel filet
  • 3 Tbsp sake
  • Salt
  • Lemon
  • Soy sauce

PREPARATION

1. Coat the fish with sake, and let it sit for 5 minutes.

2. Pat the fish dry with paper towel and discard the sake.

3. Sprinkle salt on both sides of the fish generously, and let it sit for 20 minutes.

4. lined the baking dish with aluminum foil or parchment paper and set oven to 400’F

5. Pat dry the fish again after 20 minutes. then place the fish skin side down and bake for 20 minutes. (or until it turns golden brown)

6. Serve with lemon wedges or soy sauce if you like.


NOTES

Most Japanese restaurants serve this dish with grated daikon. I plated it with pickled ginger, and pickled daikon instead. The sweet and sour of ginger and daikon made great contrast with the salted fish. Pair with rice and soup, it’s a complete dinner for one.
